230 calorie CREAMY chicken rice casserole

Something my boyfriend and I invented, a great one pot meal with TONS of vegetables.


recipe list:
1 onion
5 stalks celery
2 carrots
1 head cabbage (or shredded cabbage), napa or regular
tbsp oil/butter/whatever you want
chicken (no skin, about 1lb, i use thighs b/c breasts tend to get dry)
2 beaten eggs
1-1.5 cup dry rice
salt
seasonings
pepper flakes
lemon to squeeze (optional)
1 crown broccoli
1 head cauliflower

chop 1 onion, 5 stalks celery, 2 carrots and cook in botton of stockpot with a little oil till they start to soften. season with garlic powder, salt and a pinch of red pepper flakes.

Add in some chicken (whatever pieces you want, however much you want) last time I put in a pound of boneless skinless thighs, and fill the pot with water... leave a few inches at the top. and add some more salt (not too much!) add whatever seasoning sounds good to you (i used trader joes 21 seasoning salute), i like to squeeze about half a lemon in it for some yummy flavor.

COVER, bring to boil, reduce to simmer for an hour.

while its simmering, chop a head of cabbage, a broccoli crown, and a cup or so of cauliflower (chop this all pretty fine)

after an hour, shred and debone chicken (if necessary), and return to pot, add in the other veggies, two beaten eggs (this makes it creamy), and a cup- cup and a half of DRIED rice. (i've only done it with white.. brown would work but would probably take longer)...

bring to boil, reduce to simmer for a half hour or until rice softens and everything thickens up. Season to taste.

I calculated the calories by cutting the recipe into 6. This makes a ton so it may be less than that....
