I just took a recipe for whole wheat banana bread off the internet (http://www.100daysofrealfood.com/2011/05/02/recipe-whole-wheat-banana-bread/) and tweaked it a bit to up the protein and added a few things, namely, chocolate chips. I just baked it today and it was delicious! It was fairly moist, but if you want it more moist you can either add more oil to the recipe or just add a tsp of margarine or butter or whatever to the slice.
2 1/2 cups Whole Wheat Flour
3/4 tsp Baking Soda
1/4 tsp Salt
390 gm Overripe Banana (about 3 large)
1/4 cup Honey
1/3 cup Coconut oil (melted - can substitute but may alter calories)
1 tsp Vanilla Extract
3/4 cup (175 gm) Liberte 0% M.F. Greek Yogurt (I used vanilla)
125 gm Hershey Chipits Dark (50% cocoa)
135 gm (6 scoops) GNC Whey Iso-Burst Natural
1/4 cup (4 eggs) Egg whites
Preheat oven to 350 and either spray loaf pan with oil (will add some calories, obviously) or use parchment paper. Mix wet ingredients together in a medium bowl (mash bananas, honey, melted coconut oil, vanilla extract, egg whites and yogurt) then add chocolate chips. In a large bowl whisk together dry ingredients (flour, protein, baking soda). Add wet ingredients and fold into the dry ingredients - don't over mix or it will be tough when it bakes. Bake for 40-50 minutes, or until a toothpick comes clean.
Per ~1200 gm loaf (using this exact recipe); serving size = 1/16 or 75 gm
Calories = 217
Carb = 28 gm (12 gm sugar)
Fat= 7 gm
Protein= 12 gm
Enjoy!
