Bacon Shrimp Zoodle Scampi - 162/serving =)
I finally bought a spiralizer.....and I'm in love.
If you don't know what it is, it's a gadget that turns vegetables/fruits into thin noodley shapes. It's pretty much the best addition to my kitchen since the George Foreman. I tried this recipe a few days ago with it, and it was freakin awesome.
Bacon Shrimp Zoodle Scampi (2 servings):
- 2 slices of your favorite bacon (I used turkey bacon because I like the way it crisps up so you can crumble it)
- 6oz prepared shrimp
- 2 medium-sized zucchini
- 1T chopped garlic
- 1T olive oil
- Pinch red pepper flakes
- 1/4 chopped yellow onion
- 2-3T lemon juice (depends on how much you like lemon)
- 1T dried parsley
- Parmesan
"Noodle" your zucchini and set aside. Cook bacon however you like to until crispy and set aside. Heat olive oil & garlic in skillet. Add pepper flakes and onions and cook until onions soften. Season with salt & pepper and add in lemon juice. Cook until juice warms. Add in your Zoodles & parsley, toss to coat. Crumble bacon on top of entire pan.
The parmesan cheese isn't figured into the recipe, I topped my serving with however much I wanted.

[You could definitely add in more bacon and shrimp if you're feeling frisky. Or even add in some grilled chicken. I also think I'm going to add in some grape tomatoes & spinach next time]

Sounds amazing! Can you link to the one you purchased? I've been holding off because I don't have much space left in my gadget filled kitchen. But I do love zuchinni...have you thought of other things to use it for?0

^^^Link to the one I ended up getting. The reviews of it are good, and the little hand held ones sounded like a b!tch to clean. They also seemed to take longer to use compared to the counter-top type. You can use it to make curly fries (sweet potato curly fries anyone?) I'm thinking about trying apples/pears in it for fruit salads this summer. You can use it for carrots, but I don't think you'd get much out of it since they're pretty small
