Below 1200 calorie goal and yet not hungry, help

Hi all ,
Im 5'8 , 186 pounds and vegetarian . I ve started going to the gym and i do 45 mins moderate cardio , 15 mins strength on alternate days . I have been on mfp since one week and have been tracking my food . I notice that im always below my 1200 calorie goal and dont eat back exercised calories either .
And actually for the last 6 months i had been having just a good dinner and toast for breakfast as i was recovering from a surgery and was going through a tough time .
I know i need to eat 1200 calories easily to sustain myself and i do want to do it . If i keep slowly increasing everyday will it iron out ?
Also since im a vegetarian , i used to get only 20-25 g of protein everyday and overshoot carbs . Now with all the reading i realize i ve probably done a lot of damage to my body . I ve upped my proteins to almost 90 g now .
So my question are
Has anyone been in a similar position and will eating without being hungry help ?
Should i up my carbs above 100g just so that ican reach my calorie goal ?
How much fat can i consume ?
