Gluten-Free Banana Nut Chia Muffins

4.5 oz gluten free flour mix
.5 teaspoon baking soda
.5 teaspoon table salt
3 large very ripe bananas peeled
4 tablespoons unsalted butter, melted and cooled slightly
1 large egg
2 tablespoons light brown sugar
1 teaspoon vanilla extract
.25 cup pecans, toasted and coarsely chopped (optional)
2 tablespoons of chia seeds
Heat oven to 375. Prepare muffin pan with liners.
Mash together bananas, egg, butter, sugar and vanilla.
Whisk together flour, soda and salt.
In a few batches add dry ingredients to wet.
Mix until just combined. Add pecans and chia seeds.
Scoop into muffin tins and bake for 25 minutes.
