Stupid-easy roast vegetables (make ahead)

So last night, I realized I had to use up the vegetables I had bought for chicken soup, because the chicken I was going to use had gone off. Luckily, there is another super-simple solution here: Roast them.

This is what I had last night, but use any root vegetables you have on hand:

1 red onion
1 yellow onion
1 bag fingerling potatoes (costco)
1 large bag of baby carrots
(also would use rutabaga, sweet potato, garlic cloves, and turnips, but did not have)
3 tbsp of oliv oil (approx)
1 tbsp salt
1 tbsp garlic powder
1/2 tbsp paprika
2 tbsp dill (I LOVE DILL SO MUCH WITH OLIVE OIL)

6 eggs in shells

Preheat oven to 350.
Chop the onions into eighths. If you are using whole vegetables, dice everything else into 1-1/2" thick pieces
Spread all the veggies onto a jellyroll pan (like a cookie sheet, but has a lip all the way around)
Drizzle olive oil all over all the things. Sprinkle all the salt and spices all over all the things.
Using two large spoons, gently (!) toss and turn everything to coat.
Stick in oven for 30 minutes.
After 30 minutes, try a carrot and try to press a fork or spoon through a potato. It will probably give a little resistance still.
Toss gently again with spoons
---optional--- Gently lay eggs on top of veggies
Return to oven for another 15-20 minutes
Remove from oven and let cool for 5-10 minutes before packaging, say 2 roasted eggs and a cup of veggies per meal box. (I feed the yolks to my dogs)

Roasted eggs are amazing right out of the oven if you get them right, creamier than hard-boiled.

  • This sounds great, but you lost me with the eggs. I will make it without the oil and eggs.
    I did and it was wonderful, I also used rosemary, as I love rosemary roasted potatoes. Thanks for reminding me how good this can be.
  • The roasted eggs are optional. I just really like having an easy protein on hand in my fridge. They're basically the same as hardboiled, but slightly better texture.
