Guacmole Stuffed Sweet Peppers

I was short of ingredients and wanted to make a side dish for my grilled pork loin chops. I had an avocado, cilantro, onions, lime, and a few sweet bell peppers. I cut the stem portion of the bell pepper, cleaned the inside out of them, sprayed a bit of olive oil on them and set them to broil for a couple of minutes. I then mashed the avocado, added salt, pepper, finely chopped onions, cilantro, twist of lime, and a little bit of jalapeno pepper. Once the sweet peppers came out of the oven, I let them cool a bit before spooning the guacamole out of the pepper.

It has got to be one of the best side dishes I've had in a long time. Simple, easy to cook, and so delicious.

    The sweet peppers are about 2" long and about 3/4" in circumference. Sounds about right.

    I was wondering what you were doing outside of the chit-chat forum, but then your original post had the following words in it:

    -loin
    -stuffed
    -sprayed

    OF COURSE--this is, after all a Gato thread. :laugh:

    Anyway, I prefer my sweet peppers stuffed with meat.
