FRIED CHICKEN!

Hey everyone!
Okay so I wasn't really raised on a whole lot of fried chicken but I married an American...and when we first got married he wanted me to make it at least once a week lol....WITH his mom's mac & cheese recipe...but when I started I shuddered at the thought of how bad it was for us. Of course, those concerns all melt away when you actually eat that chicken fried goodness. Luckily, I found a way to BAKE chicken and it TASTES and has the TEXTURE of fried chicken but without all of those bad calories!
The answer is: OVEN FRIED CHICKEN!
Here's the recipe:
Ingredients
1 cup PANKO breadcrumbs
1/2 cup freshly grated parmesan cheese
1 tsp garlic powder (i don't add this cause of an allergy to garlic)
1/2 tsp cayenne pepper
1 tsp salt
2 eggs, beaten
4 skinless, boneless chicken breasts
Cooking oil spray
Directions
Pre-heat oven to 375. Lightly coat a baking dish or sheet with cooking spray. Combine first 5 ingredients in a shallow bowl. Dust them in flour first, then dip each chicken breast in the beaten eggs and then coat both sides with the bread crumb mixture. Arrange the chicken breasts on a baking sheet.
Bake for 35-40 minutes or until cooked throughout.

You should be able to find them at any grocery store. They are light and the way they cook honestly coats the chicken like it's fried! I also added some paprika to it tonight. We're out of veggies and stuff and luckily I'm way under my calorie goal so I'm treating myself with PEROGIES...YUMMY!!!0
