If I am over my calories by 200 calories one day, do I go under by 200 calories the next day, or do I just keep on trucking and say "oh well"?

200 calories is nothing. Move on and don't worry about it.0

Assuming you are on a 1 lb per week deficit, 3500 Cals per week, you have a 500 Calorie per day deficit. Going over this allowance puts you at a 300 Calorie deficit today. If you hit your Calorie goal every other day this week, you still end up with a 3300 Calorie deficit for the week. This means you can expect (disregarding, for the moment, water weight fluctuations and the fact that weight loss isn't necessarily linear) to lose 0.9+ lbs this week.
In short, don't worry about it. Carry on.0
