question about timing/averaging calories

I hope I can ask my question so it makes some sense.
I just recently got a food scale and have been practicing weighing things. I also need to do more practice on calculating my personal expenditure as I have been very sedentary (spending most of the day not even sitting up, much less moving around) but was still losing too quickly off of what I was counting. Perhaps I was underestimating calories and that is one of the reasons I got the scale.
My question I guess is- I eat A LOT. I am very much a grazer. I LOVE vegetables. I have no issues eating quite frequently if I am quite frequently eating lettuce
However this makes weighing and portioning a bit more cumbersome that I would like.
What I am wondering is, say I eventually figure out I need to eat 1700/day with basically lying down all day to lose 2 lb/week. Do you think it would be ok if I measured out all the veggies and logged them at the start of the week and just ate through my stash not logging those particular foods as the week progressed, and just took the total veggie stash and divided it by 7 and reduced my other (not already measured/counted out foods) by equal amount per day to average it out?
So some days I might be low and some days I might be high off of my personal numbers, but the weekly average would end up being 1700 (or whatever my number should be, I just have a strong feeling that it should not be the 1200 MFP suggests) should that be ok ?
(and yes I do plan on adding in exercise I just was trying to get some eating numbers down first, but I am headed out of town and am going to be eating out all meals for a couple weeks and VERY active for me during that time frame so everything is about to get a little funky as I will likely be eating an average of 4-6k a day and by the time I come home I'll just be used to being more active anyway so I will just need to keep up the exercise and drop down the food. I don't want to end up with the physique of a small bowl of jello LOL!)
Or if someone who is smarter than me understands what I am trying to ask and can rephrase it so it makes more sense. I barely understand it myself but I am trying to eat in a range with an average but extrapolating from a lot of what I have read I get the impression there is some reason why doing that might be bad?
My BMI is likely just barely out of the morbidly obese range so I'd like to stick to 2lb/week at least until I am a solid "regular" obese but I am hoping it would be ok if I eat "around" my target to end up at an appropriate average. If eating an "average" is ok do you think it would be bad if I had some 700 cal days and some 2300 cal days in the week or should that be ok so long as the average turns out alright?
