Introducing Gluten back into your diet

Hey everyone,
I've been gluten-free since May 2013. Since then, I've lost almost 50lbs. The first 30, I can probably attribute to completely changing my eating habits: eliminating gluten (for the most part, sometimes things sneak past you), going to a more plant-based diet, watching my sugars, going for water instead of pops and juices, etc.
Once that first 30 was off, I had way more energy and joined a gym. Although since November or so, I've only lost 16lbs, I feel I'm building muscle and endurance and can now keep up in step class!
My question is: can you develop celiac disease over time? Should you eventually re-introduce SOME wheat and breads back into your diet for the long-term (although definitely not as much as relied upon before)?

    Gluten free is the biggest scam since "Organic". People who have real celiac disease go into anafalaxis shock when exposed to gluten. My x girfriends mother had celiac disease and had to get a monthly shot to keep her from dying from exposure. If you want bread eat bread, if you don't then don't. Ever notice that gluten free foods are more expensice ? Ever notice organic beef and prduce are more expensive ? Are they better quality ? Absolutely not. There is no evidence supporting that organic, gluten free, or any of this other hipster fad garbage is valid.
