Coffee Quinoa Cake 104 calories a slice!

I adapted another recipe I found online for a quinoa cake, and substituted some ingredients to make it low fat / cal.
2 cups cooked and cooled quinoa (I used the Minsley pre-cooked bowls)
1/3 cup milk (coconut, soy, lactaid, almond, whatever you use)
4 large eggs
1 teaspoon pure vanilla extract
4 tbsp unsalted butter, melted and cooled
1/2 cup granulated sugar
2 tbsp Sweetleaf stevia
8oz unsweetened applesauce
4 tsp instant coffee dissolved in 1 tbsp hot water
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
For the cake, preheat the oven to 350 degrees F. Lightly grease two 8-inch round cake pans (or I used one 9 x 13 rectangular pan). Line the bottoms of the pans with parchment paper. You can also do cupcakes, but they DO stick to the wrappers. Perhaps use a muffin pan well greased??
Combine the milk, eggs and vanilla in a blender or food processor. Process just until combined. Add the cooked quinoa, applesauce, coffee and butter. Blend well until smooth.
In a large bowl, mix together the sugar, stevia, baking powder, baking soda and salt. Add the contents from the blender and mix with a wooden spoon or whisk until combined.
Pour batter into pans and bake on a rack in the middle position for 35-40 minutes (20 - 25 minutes for cupcakes) or until a knife or toothpick inserted in the center comes out clean. Remove the cake from the oven and cool.
I cut into 14 (good sized!) slices @ 104 calories a slice. Yum!
For a chocolate version, substitute the coffee for 1/2 cup unsweetened cocoa powder and 1/2 cup chocolate chips. I haven't workd out the calories for that though!
Also, nuts could be added for more protein.....
