    I bake these muffins weekly...

    http://www.sugarfreemom.com/recipes/personal-sized-baked-oatmeal-with-individual-toppings-gluten-free-diabetic-friendly/

I usually replace the stevia with 1/2 cup honey and us unsweetened almond milk (I cut it back to 2 cups instead of 2 1/12)

I have used yogurt instead of apple sauce...

I don't use the flax meal...I tried it but didn't like the taste so I just leave it out.

I also switched to the Hain baking powder to reduce the sodium.

I have also made the peanut butter muffins.

Google clafoutis and creme caramel. Both desserts contain little added fat.

Clafoutis contains milk, flour, sugar and eggs and fruit. It's essentially fruit, with pancake mixture poured onto it, and baked in the oven to make a homely cake. Only butter is used for greasing the pan. Look for a recipe that leaves out the cream and just uses milk. I make mine with semi skimmed.

Creme caramel is essentially milk, eggs and sugar. It's a custard with caramel glaze. Again look for a recipe that uses only milk, and no cream.

I make these every week and they are amazing. I put cool whip on top. So good and so easy!
