    Mexican fish is one of my favourite dishes!

    I frequently use this recipe:

    I like mine with chili powder,, cumin, salt, pepper and lime juice. Season it, wrap it in aluminum foil and pop it in the oven. It's moist and flavorful. When it's done, you can add salsa and a little sour cream as a topping. Another way I like it, is to pan sautee it in a little olive oil, season it with Jerk seasoning and then right before you take it out of the pan, pour a couple of tablespoons of Mango Vinaigrette Salad dressing over it to make a sweet, tangy glaze.

    We use a medieval recipe to spice up white fish. I know it sounds weird, but it tastes delicious

    per fillet
    1tsp ginger
    1/4 tsp clove
    1/4 tsp cinnamon
    1/4 tsp pepper

    rub with olive oil(or dot with a little butter) spread spice mix over the fillets wrap in foil and bake at 400 F for 13-15 minutes.

    1- "Fish in Crazy Water"

    Place the tilapia in a large frying pan
    Cover with salsa + 1/2 cup water
    Let simmer for 15 min until fish is cooked
    Remove fish, leaving sauce in the pan
    Add a little flour or cornstarch to thicken sauce

    Serve over brown rice w/toasted almonds or quinoa

    2- Fish tacos
    Season fish with lemon juice + black pepper & pan fry

    While fish is cooking, mix chopped cabbage w/greek yogurt to coat, lemon juice & garlic, refrigerate until fish is finished

    Dice 1 Mango + 1 avocado, mix in red onion, cilantro, red pepper flakes

    Serve in med sized whole wheat tortillas

    We do this with cod but it might work with other white fish. A dollop of sour cream and crumbled bacon on top.
