homemade spaghetti sauce

OK, per another person's request I am posting this. I will admit, every time I make this sauce I do it a little different. However, this is the ingredient list from the last time:

extra virgin olive oil 1-2 tbsp
Shallots - Raw, 3 tbsp chopped
Garlic - Raw, 3 cloves chopped fine
Barefoot - Cabernet Sauvignon, 6 oz/1 glass
Hunt's - Crushed Tomatoes large can (16-22oz, can't remember)
Raw Green Bell Peppers - Green Bell Peppers, 25 Strips chopped/diced
Vegetable - White Onion, 12 slices (1/8th inch)
Monterey - Baby Bella Mushrooms, 1 CUP chopped/diced
Hunts - Tomato Sauce 15 oz Can, 2 containers
Hunt's - 100% Natural - Tomato Paste, 0.5 container (8oz can)
spices - bay leaves, basil, oregano, garlic powder, kosher salt, fresh ground pepper, smoked paprika

in 4qt pan, bring to medium heat and add EVOO. once oil is heated add shallots and garlic, and saute until turning golden and aroma has released. add wine and bring to boil, cooking until liquid has reduced by about half. be sure to keep on medium heat after boiling and keep stirring to prevent wine from scorching.

once wine has reduced, add tomato products and vegetables. stir until combined and reduce heat to low. add spices (4-8 bay leaves, salt, pepper, basil, oregano and paprika) to taste. (I tend to like LOTS of flavor, so there's about 1-2 tbsp of oregano & basil each, and my salt & pepper are both in grinders so about 20 turns of the grinder, and a little of the smoked paprika goes a long way - so about 2 tsp) let simmer on the stove at low heat for anywhere from 2-6 hours, stirring at least once an hour. if sauce is too thick, add a can of tomato juice (NOT WATER, ruins the flavor and consistency) - if sauce is too think add more tomato paste. add garlic powder and additional spices near the end of cooking to your tastes.

I personally also add my homemade meatballs or a combo of ground beef and sausage to this, but you can also use it as a sauce with chicken, pork, seafood, or more veggies. sometimes, I also will chop up some pancetta (Italian bacon) and add that at the same time as the shallot and garlic at the beginning of the process.

    I have started using Italian turkey sausage in mine, which is a lot like your recipe......Its awesome esp when I hear the MANLY beef lovers in my home say thats some of the best youve made:)
