Recipes for after-hospital recovery

Hi everyone, my mother in law is going home from the hospital this week after back surgery and will have limited movement abilities. She will have a nurse and a home health aide for part of each day, but for some meals she'll have to get up and do a little work on her own.

We live an hour away and will be going up to visit on the weekend. I'd like to take her some single-serve, microwaveable meals that she can just nuke for a couple minutes without having to be on her feet for a long time. They don't have to be low cal or anything. I'm thinking along the lines of eggs/cheese/sausage baked together in a muffin tin, frozen, so she can just take one out, heat and eat.

Do you know of any sites that have recipe collections that might be helpful? She's not allergic and she loves all types of cuisines. Thanks all!

    Is it specifically for breakfast (I'm asking because I see you mentioned eggs/cheese/sausage bake)? If so I have a recipe I just found for Baked oatmeal, you can make a pan for her and she can just take some out as she wants and eat it either hot or cold (I've had it both ways since I made it and it's YUM!... my taste testers agree)

    Will she be on narcotic painkillers? If so, you might want to make foods with a lot of fiber, as anesthesia+narcotics = massive constipation in many people.

    My faves right now are egg muffins - breakfast meat, spinach, mushrooms, a bit of cheese in a muffin tin, topped with eggs and baked. Can then be put in the freezer or fridge and microwaved as necessary.

    For a sweet tooth, fat free pumpkin muffins - spice cake, egg white, water and pumpkin puree - again, I make them and put them in the freezer.

    Ham, Pasta, Brocolli, alfredo sauce and swiss cheese - can mix up and put in smaller disposable containers to freeze and heat as necesesary. Its non spicy but delicious and easy on the stomach.

    After surgeries or when I don't feel well I always gravitate towards yogurt, cottage cheese, scrambled eggs, milk toast, cream of wheat.
