Salad for lunch blues? Try making soup!

As I was lunch planning for the week and thinking that I needed a break from salad and cold veggies every day, I took those veggies and made soup!

A few of my favorite soup ingredients:
- peppers in a variety of colors
- Aldi's brand Happy Harvest fire roasted tomatoes (YUM!)
- Trader Joe's 10-minute barley
- cole slaw mix -- yep, I throw in a handful to "bulk up" the soup

A few other veggies, some chicken and chicken broth and I have soup for about 200 calories per serving according to the MFP Recipe Maker!

What are your favorite items to put into soup??

    Got to have a can or two of tomatoes. Aldi has good ones as you say. Other than that I am really into tossing the baby spinach in there. Not so fond of the way one always sticks to my teeth. And I love the pre-cut matchstick carrots.

    Love soup. I like to make several kinds of soup. I use lentils, kale, leeks, spinach, fresh garlic. I also use tomato paste for a rich flavor in most of my soups.

    I do mushrooms, cooked white rice, crumbled bacon, carrots and onion in a chicken broth. Comes out to around 250 cals for 2 cups, and it's really filling.
