I always like to get ideas from others to keep the menu interesting around here.

I'm making a pot of chili and some cornbread tonight.

    Tonight is Pork Roast with Brown Rice & Gravy with Steamed Broccoli and Carrots!

    Last night I made Chicken in the oven with LowFat Swiss Cheese & Broccoli Stuffed Inside covered in Whole Wheat Breadcrumbs.
    I also make a lot of Chicken Quesadilla's with Skim Milk Cheese and low calorie Tortillas.
    Homemade Calzones are good too.
    I also like Tuna Steaks and Salmon Fillet's with .. you guessed it, more steamed vegetables! Mmm.
    There's also Turkey Burgers ..
    Stew in the Crock Pot with Beef Stew Meat, Carrots, Potato & Gravy.

    That's all I got for now.

  • Just had 2 pieces of Chicken Breast marinated in 2 tablespoons lemon juice and a tablespoon of Extra Virgin olive oil, with a side of couscous (with sundried tomatoes and cilantro). I cook the couscous in a low sodium chicken broth for a little extra flavor.

    My leftovers will be lunch :D

    I generally add about 1/2 a green bell pepper with the onion and I use Linguica sausage rather than chorizo...I like that smokey flavor...then I just add some red pepper flakes for a little kick. I will be serving it over brown rice.

    6.8 oz baked chicken tenders seasoned with Mrs. Dash
    2 Tbsp Honey Mustard

    Mashed nuked sweet potato with cinnamon, vanilla extract and 2 tbsp of unsweetened almond milk.

    Slow roasted pork loin with fresh spinach and steamed mixed veggies.
  • Its a bit high in cal but for a treat I made us sweet hamsteak in the skillet. I used a two pound bone in hamsteak. I heated the pan to med high and browned each side of the hamsteak. I removed the ham and drained the pan before adding 5TBS EACH butter and brown sugar. Once that mixture combined I put the ham back in the pan and cooked and flipped a few times until it had a beautiful glaze to it. Again a treat! I added the nutrition info in the database but I did not come up with a sugar content.

    Its big and will feed us several days. You only need a small amount but its very good. I served it with some jasmine rice cooked in a little garlic and chicken broth, along with some raw veggies.

  • Chickpea salad sandwiches!

    Chickpeas, carrots, celery, pickles, hummus thinned out a little with some pickle juice, salt and pepper. The veg (except for the beans) are diced finely, the chickpeas are mashed with a potato masher and it's all held together with the hummus.

    This would easily be enough to serve 4-6 people, I'm having leftovers for days, but it's fabulous lunch food, so there you go. :)

    Serve it on toasted 12 grain bread with a head of romaine and sliced roma tomato, or for the especially lazy -- ahem, HUNGRY! -- with some saltine or ritz crackers!

    Baked Ratatouille

    Ingredients
    5 turkey bacon strips, cut into 2-inch pieces (optional)
    1 cup sliced onion
    3 cloves garlic minced
    1 can (14-1/2 ounces) diced tomatoes, undrained
    1 tbsp olive oil
    1 large garlic clove, minced
    1 teaspoon Italian seasoning
    1 large eggplant (about 1-1/4 pounds), peeled and cubed
    4 medium zucchini, sliced
    1 large green pepper, cut into strips
    1 cup Light Tex Mex Shredded Cheese
    Salt to taste

    Directions
    In a large skillet, put oil cook bacon and onion over medium heat until bacon is crisp; drain. Stir in the tomatoes, oil, garlic, salt and Italian seasoning. Cook 5 min
    Spread half into a greased 13-in. x 9-in. baking dish. Layer with half of the eggplant, zucchini, green pepper and cheese. Repeat layers. Bake, uncovered, at 375° for 50-55 minutes or until hot and bubbly. Yield: 8 servings
