    Baby spinach in everything- in my smoothies, in my salad.
    I'm also really a fan of steamed zucchini and boiled rutabega.
    I also really like spinach or turnip green, or even black-eye peas with chow-chow relish on them. Mm.

    Actually the only vegetable I have an aversion to is brussel sprouts, so I guess I love almost everything. <3

    broccoli, spinach, zucchini, carrots, avocados, eggplant, lettuce, cucumber, tomato (for those who consider it as a vegetable) :)

    I love almost all veggies, particularly egg plant and zuccini roasted together.

    I would rather have a hot stick poked into my eye however than eat brussel sprouts or beetroot

    Really, I love all vegetables. I can't think of one i don't like. Nutrition wise though: dark, leafy greens have sooo much calcium and iron.just as much as meat and dairy!

    Raw: carrots, tomatoes, avocados, cauliflower, sweet peppers, cabbage, garlic (chopped in salad), spring onions

    Boiled: beetroot

    Steamed: broccoli, carrots, cauliflower, corn on the cob

    Pan fried: onions (gently so they caramelise), leeks, shredded cabbage with garlic, mushrooms, asparagus (only if in season!)

    Roast: carrots, parsnips, butternut squash, cauliflower, sweet peppers, potatoes

    Baked: potatoes, kale (chips), chickpeas (garbanzo beans)

    Boiled with pasta: kale, spinach, broccoli, spring greens, peas, soybeans

    In soup: just about everything, favourites probably pumpkin/squash, tinned tomatoes, cauliflower, leek & potato, carrot, broccoli

    PS:

    To everyone posting peas, those are lentils, not veggies.
    Did you intend to say LEGUMES?
    lol... also, think OP is looking for ideas, not classifications. :smile:

    - red capsicum because it's a bit sweeter than the green cousin
    - broccoli! I would eat it every single day! But not raw..
    - Jicama is an old time favorite. I love it with lime, salt and chili powder
    - Avocado!!

    -Cauliflower (Especially Mashed)
    -Roasted Butternut Squash
    -Baked Zucchini Squash

    -Steamed Broccoli
    -Raw Carrots
    -Raw Bell Peppers
    -Raw Cucumbers

    Boiled - brussel sprouts, cabbage, green beans
    Fried - onions, mushrooms (in garlic butter!)

    Carrots, red peppers, pumpkin (actually a fruit though). Tomatoes (another fruit) straight from the garden :-)

    Pumpkin is great for pumpkin-coconut-curry soup :-)

    I eat a lot of raw vegetables. Mostly broccoli. cauliflower, celery, radishes, broccoli slaw, salad greens.

    Yesterday, 380 of my 1650 calories (23%) came from veggies.

    Onions, broccoli, cauliflower and mushrooms. ESPECIALLY mushrooms.

    If I had a big bowl of these every single day for the rest of my life, I would NOT complain. Yum! :love:

    I just tried a new one. I steamed fresh broccoli and tossed it with Annie's Roasted Red Pepper dressing and a little parmesan. Even my husband raved about it!

    Green beans, spinach and zucchini. I like the green beans and the spinach sauteed in olive oil and garlic. I like the zucchini broiled until it's a bit crispy. Almost forgot, I like cauliflower cut into florets and mixed with garlic, parmesan cheese and olive oil, and then roasted in the oven.

    If someone wants to PM me a list of more uncommon vegetables I have been having a blast trying out a few.

    Spaghetti Squash. Cut in half, coat in spray or low cal oil, then bake open side down for 45 mins. Shreds just like spaghetti noodles. Love it.

    Artichokes. I have destroyed these in an effort to try them countless times. I like the taste, when I can get in them.

    Eggplant. Literally just discovered it. Has been the most disgusting thing ever, and the most delicious, depends how it's cooked in my opinion. (slice it thin)

    Any one else?

    I like eggplant marinara. Slice it, pan fry in a bit of cooking spray, then layer in a baking dish with spaghetti sauce and mozzarella cheese. It's very good like that.
