With pork I love mustard, so I would personally just marinate the medallions in mustard before baking. If you really want a sauce you could make a light roux and flavour it with mustard.0

Whatever the kind of mustard you like! I usually have the very spicy Zaanse Mosterd, but Dijon or tarragon mustard are also very good.0
