Confused about,Glycemic Index, Blood sugar spike

people say when you eat carbs they raise blood sugar and cause fat storage even if your in a defecit
i dont understand this, i know they say you should eat most carbs in the day less at night, please explain how it stores body fat

what carbs can i eat all day and night without worrying about blood sugar

also RICE CAKES have very high gi, but very low calories,

please explain

    I think if you research glycemic load as opposed to the index it might help you understand any limitations. The popular reason people say that raised blood sugar makes us store calories as fat is mostly lack of information. Insulin blunts fat oxidation because it's taking the nutrients in the blood at that particular time and sending them to their perspective compartments, that being to glycogen and amino acids for cellular repair and function. We burn a good percentage of fat when were inactive and when we eat, blood sugar rises and switches that off basically for the processes I mentioned, that's it, it's not a mystery. How much fat we actually gain or use in a day is regulated by the total amount of calories, not raised blood sugar. Blood sugars are also regulated all day and even when we don't eat blood sugar is raised, and if blood sugar caused fat storage then that would mean we gain fat in the absence of food, which is of course impossible.......Without blood sugar we also die, so no fear about insulin and blood sugar it's all good. Of course if someone has medical issues regarding blood sugar, then of course that's a different kettle of fish.
