I have had my Flex for about 3 days now and I just did the choose your food plan choice today on my dashboard. I do not understand why it says I'm over (in the red) when I have 283 calories left for the day. Does anyone understand how the calories in vs calories out tile works?

No I do not understand it either. I have the Fitbit Tracker Plus, The one you wear on your wrist 24-7. I even sleep in it. I connected it to myfitness pal today and am confused about the negative calories. I worked out and burned 446 calories today but then it took away 273 and said I had only 174 extra to eat for rest of day which gave me a total of 481 I believe left to eat for the day instead of the 748 I thought I would have. Do not understand it at all. Any help out there for either of us?0

I was confused by this too at first.
Basically the "Food Plan" is an estimate of your day, not set in stone.
As you burn calories right now, or throughout the day, it goes up/down based on how many you ACTUALLY burn.
I tend to hide the food tile because it drives me nuts -- I just eat at my weekly average/TDEE and ignore the fluctuations.0
