I'd also suggest finding foods with lots of B Vitamins in them (again for the pick me up benefits of B vitamins). Part of this is boredom (that 3rd shift is grueling due to boredom) and part of it is poor planning. Definitely keep nuts handy if you're not allergic as they are good sources of protein. I always hear pistachios recommended, especially if you're shelling them yourself as that helps you eat less of them. Also most people like salted, which satisfies the part of your brain that associates salt with snacking (I'm thinking chips). Keep the high fat foods away, so you will have to plan ahead.
Depending on the job, the idea of a little movement is a good one. Jumping jacks, walking in place, just move. Again the bit of exercise will wake you up, and deter the mindless snacking to stay awake.
