Lower calorie latkes

Made these today. Not as glorious as full fat, but a reasonable approximation using very little oil. I think I used a tablespoon of oil for a kilo of potatoes.

1 kg starchy potatoes
1 onion
2 beaten eggs
25 g flour or fine bread crumbs
salt and pepper to taste
olive oil sprayer

Finely grate the potatoes. Grate or finely dice the onion and mix with the potato. Squeeze out as much excess water out of the potatoes as possible. Combine well with the remaining ingredients.

Spray a medium hot non stick frying pan with olive oil and drop a heaped tablespoon of potato mixture into the pan. Flatten with a spoon. When the bottom is brown or starts to scorch slide off the pan, spray some more olive oil and turn the latke, pressing flat with a spatula. When it is brown move to an oven tray. When you work with so little oil, you won't manage to cook the potato and onion all the way through before the latkes brown or scorch slightly. Prior to serving, finish the latkes in a 150C oven for 30 minutes.

    I love every idea I read of yours! You must be such a great cook! My mum is Ukrainan, I love latkes! Been ages since I made them.

    We should be friends. I cooked for a living a couple of times and had a French chef offer me a job catering with him a couple of months back.
