Pound Cake
Pound cake is usually a diet-killer with all that butter, but I just came across this recipe.
5 tablespoons reduced-far margarine or light butter
1 1/4 cups sugar (or substitute splenda)
3 egg whites
1 1/2 teaspoons vanilla extract
1 2/3 cups unbleached flour
1/2 cup oat bran
1/2 teaspoon baking soda
1 cup vanilla or lemon nonfat yoghurt
1. Combine margarine/butter and sugar and beat until smooth. Add the egg whites and vanilla. Beat until smooth. In a seperate bowl, combine the flour, oat bran, and baking soda. Add the flour mixture and the yoghurt to the butter mixture and beat until well mixed.
2. Coat an 8x4" loaf pan with nonstick cooking spray if needed. Spread the mixture evenly in the pan and bake at 350F for 55 to 60 minutes or until a toothpick comes out clean.
3. Remove from oven and let sit for 20 minutes. Invert and cool on wire rack.
