Tuna and Black Beans
I love this easy recipe for a low fat protein packed lunch.
1-can 5 oz. tuna in water (no oil)
1-can Bush's black beans, low sodium
1 baby bell sweet pepper
1 Tbsp lemon juice
1/2 tsp ground chipotle pepper (or seasoning)
1/2 tsp black pepper
stir to combine all ingredients and serve.
Sometimes I'll add cilantro or crushed red pepper. Once in a while, I add 1-2 TBSP of light miracle whip (my wife prefers light mayo) for the flavoring, but that adds more calories, so I only do it if I have plenty to spare in the tracker.
