Confetti Salad
From Bon Appetit-circa 2006???
Ingredients:
1 cucumber, chopped
16 ounces baby peas, thawed
2 bunches radish, chopped
1 cup celery, chopped
1/2 cup red onion, finely chopped
a SMALL, SMALL, SMALL amount of ranch salad dressing,(just enough to lightly coat salad, the water from the ingredients helps to create more dressing)
Directions
1.Combine all vegetables in large bowl.
2.Toss salad with enough Ranch Dressing to coat. Season to taste with salt and pepper.
3. Chill for 30 minutes-1 hour.
Can be prepared 4 hours ahead. Cover and refrigerate.
Recipe makes 6 servings
