Italian Asparagus

From Cooking Light-2002

Ingredients:
1 lb fresh asparagus spear
3/4 cup chopped tomato
2 tablespoons chopped green onion
1/8 teaspoon dried oregano
1/8 teaspoon dried thyme
1/8 teaspoon pepper
2 teaspoons freshly grated parmesan cheese or asiago cheese

Directions:
1.Snap off tough ends of asparagus.
2.Remove scales from stalks with a knife or veggie peeler, if desired.
3.Arrange asparagus in a veggie steamer over boiling water.
4.Cover and steam 4 to 5 minutes or until crisp tender, keep warm.
5.Combine tomato and next 4 ingredients in a small bowl, stir well.
6.To serve, spoon tomato mixture over asparagus, sprinkle with cheese.

    ho perfect !!!!!!
    i just had my nose in the fridge and saw asparagus that i bought and forgotten to eat, or got lazy coz i didnt know what to do with them :laugh:

    so thats tomorow's dinner!!!!

    I like this recipe b/c it is simple and you can use the dried herbs which I always have on hand, hope you enjoy, feta cheese is good on it too:bigsmile:
