Bulking was SO much easier... what am I doing wrong?

I am eating 35/35/30 for macros and at about a 300-500 calorie deficit depending on the day. I usually do about 1 - 1 1/2 hours of weight lifting and then I do 20 - 45 minutes of interval training. Once a week I go on a really long run, 6+ miles. I am not seeing a reduction in my body fat. I am eating clean for the most part. 5-6 small meals a day, I never go longer than 2 hours without eating.
I have my off days as anyone else does but I don't think a few off days would derail my cutting phase... would it?
Honestly I have no clue what I am doing wrong and would love some advice.

It depends on how accurate you in logging and how "off" are the off days. If e.g. you are in a 300 calorie deficit for 4 days, and then go more 1000 over maintenance the 5th day, you are pretty much back where you started.0
