Heart Rate Zones

Does anyone know of a good way to determine your personal heart rate zones with some sort of test? My heart rate monitor registers that I have averages of 180-190 BPM while exercising, and my max heart rates are at about 204-205. I had this confirmed by a cardiologist, who said it was fine, but it's making use of some of my heart rate monitor's functions useless. I have a Garmin Forerunner 620, and the recovery recommendation is always three days because it goes based off typical heart rate zones. It could also affect the calorie estimates it gives.

can you enter a max heart rate rather than it using an age formula ?0
