Hey all my fellow vegs!
So being a veg makes weight loss hard, especially if your main problem is the same as mine: carbs. I have some good go-to healthy veg recipes but was wondering if anyone had anything spectacular (and low on carbs) up their sleeves?

I don't have a carb count, but I am sure that you can figure it.
Recently I made Refried Bean Enchiladas for the whole family. Made with whole wheat tortilas. I also like Low-Carb Tortillas. I filled my side of the pan with enchiladas with beans, onions and olives, and my family's side also got cheese. Used a nice small can on medium enchilada sauce. One of the tastiest things that I have had since becoming a vegan.

I would've thought being veg would make weight loss easier??? I've been contemplating going veg for some time...my doc is on me to do that and I've been doing a lot of research on it and I think I'll start by going lacto-ovo veg.0

I make tofu and vegetable stir-fry. It's pretty low in carbs.0

I've heard that if you become a veg while your trying to lose weight than it helps. I've been a veg for gosh...almost 15 years now so my body is used to not having meat. In fact I know vegetarians who have started eating meat again and dropped like 10 lbs almost instantly. For me, carbs a big issue. I can have high fat foods (though I don't like most sugary things so it's a non-issue) and even go over on my calories but if the carbs get crazy then I instantly gain. Cals I can burn because I'm a runner. Carbs, a little harder. Try it out though, see if you can do it. Just keep track of those proteins!
Also, thanks pragya - I used to do more tofu stir fry but I stopped. Will totally add it back in.
BMW - Yumm! I'll have to try enchiladas. I wonder if I could put some lentils in too...0 -
I googled low calorie vegetarian recipes and got a few ideas. I made goat cheese broccoli souffle and it was yummy and not as hard as I thought. My veggie chilli is pretty low calories and low carb. Of course I usually have a little corn bread though. I am not vegeterian but my son is.0

And FYI Carbs are good! They fuel EVERY cell in your body. And its the only fuel (glucose) that your brain, red blood cells, and nervous system use! If they dont have the ATP (enegery) from carbs (glucose) they eat away at muscle, which revs metabolism, which interns allows you to eat more (because you burn more).
You need to get to know the good carbs out there...stay away from candy, soda, saturated man-made products. You are really cutting yourself short if you take away carbs.
To digest carbs more successfully, eat it with a healthy fat or a protien...this will allow you to break it down faster, and then there will be no extra glycose stored as fat. (You usually hold about 30g in your bloodstream, and and about 100g in you liver as glycogen...)
Im sorry if it too much info, Im studying to be a Registered Dietican, and I just want to make sure you get correct info...you dont want to hurt your metabolism!!

P.S. To burn carbs it takes ENDURANCE/ DURATION training...it sucks, but thats how we get into those carbs that store as fat!0

Thanks for all the info! I'm not cutting out carbs completely, I'm just watching them like I watch my calories and protein. I didn't know that endurance helps keep carbs from turning into fat, though. Thanks!
Oh and BMW - I just made a lentil loaf for lunch (one of my favorite low cal/carb veg recipes) and it was delicious. Lentils are amazing.0 -
Speaking on Lentils, my wife was a missionary nurse in Bangladesh. When she came back to the states, she brought also sorts of great lentil recipes. I love it when she makes Dal or Dahl. It is like a lentil sauce that you serve over rice.0
