Looking for diet/calories guidance

I believe I'm unusual in that I can only workout during the weekend. I do lower body on Saturday and upper body on Sunday. The rest of the week I'm pretty sedentary: car to work, desk job, work to car. I would like any tips on calorie intake & diet. I am not trying to lose weight: my goals are to build my endurance and get toned. I'm 40, female, 5'8" and about 135lbs. I just got back into exercising regularly: this is my second weekend so far. Should my diet vary on workout days vs non-workout days? Any help is appreciated.
