Ricotta pudding

I've been obsessed with this... just delicious.

1/2 cup of ricotta (nonfat, low fat, full fat, whatever you want)
1/3 cup of milk (I've only tried cow milk)
Jello instant pudding mix (1 serving)
Sweetener of your choice (if using sugar free pudding mix)

Mix it all and stir.

I've done strawberry cheesecake (cheesecake pudding mix and strawberry jam), caramel cheesecake (cheesecake pudding mix and caramel), vanilla and berries (vanilla pudding mix and frozen berries, left overnight), possibilities are endless, and it's delicious!

Calories depend obviously... Anywhere from 160ish to 300+.

    Bump. This sounds good! And you could save a little money by making the ricotta from some of the milk.

    Bump! This sounds great. Have you tried mixing in some protein powder or PB2?

    I've mixed it with peanut butter and it was really good.
