    Tonight will be buffalo chicken salad on Kavli Hearty Wheat Crax. I'm teaching tonight...so quick and easy it is! I'll have some veggies and "dip" for my before bed snack...probably cucumbers with some blue cheese yogurt dressing. And a serving of cottage cheese to get my protein in. FYI: All y'all are making me hungry with your good dinners! Happy Veteran's Day to those who have served!

    Ate pretty much the same thing for lunch today as dinner last night - presentation isn't very pretty because it is crammed into a tupperware but I remembered to take a picture!

    Margie and I had lunch together {which is pretty rare} at The Oaks in Marianna. I had the buffet, {on the house since today is Veterans Day} and as good as I thought I had done, it was still over 1200 calories. So tonight I was still full. I messed around and didn't eat supper at work. After a quick search of the fridge once I got home, I decided on a cheddar cheese omelet with ham and turkey. I added toast and lettuce to make a sandwich. Also found some sweet potato fries. Very good, and didn't take but a few minutes to prepare.

    Bean soup (homemade pink beans, chopped mushrooms, asparagus, spinach, green onion, roasted butternut squash and brussel sprouts, nitrate free beef hotdog, parm cheese, pepita seeds and raisins; and a couple clementines.

    A salad made with Romaine lettuce, carrot, cucumber, tomato, onion, bell pepper and Cajun rotisserie chicken leg and thigh meat. Very good, but I used the last of the lettuce. Will have to shop.

    A ham, turkey, Cajun rotisserie chicken breast sandwich with mustard, cheddar, tomato, onion, pickle and Romaine lettuce. Also green beans and stir-fry with Cajun rotisserie chicken leg and thigh. Both good and hot.

    Yesterday evening's supper:

    Shrimp Scampi(my mom made it). It was amazing! She made it pretty spicy, but it was still good!(I even asked her if she could send some home with me.

    For dessert, jello cake. That was awesome too(my mom does a great job with cooking). My mom also sent me home with that and a couple of krautburgers(yum!).

    Wish I would not have chosen a green plate for a salad picture, but oh well.

    Mixed green and spinach salad with goat cheese, grilled turkey tenderloin, parmesan pepper nut clusters and bolthouse creamy basil greek yogurt dressing. Garlic herb bread broiled with butter and parmesan cheese also.

    I skipped lunch today, and Margie is out with her girl friends tonight, so I had an early supper. I had kidney beans with rotisserie chicken {leg, thigh and wings}. Very good.

    Butter pecan no sugar added ice cream with my {mostly} sugar free Greek lemon pudding, sugar free Cool Whip and grapes. Yum. And only 222 calories.

    1/2 a grilled chicken burrito with Spanish rice, onions, romaine lettuce, salsa and a little sour cream; mixed greens salad with chopped tomato, cucumber, mushroom, parm cheese and turkey; strawberries.
