chicken sauage baked egg rolls
so I just whipped this one up last night and it turned out great and only 165 calories per egg roll. I made them as a main dish and did salad on the side. It makes 8 egg rolls. I hope you enjoy!
4 Organic chicken and wild mushroom sausage links ( I used store brand)
1 Cup fresh button mushrooms
1/2 cup fresh broccoli
1/2 cup fresh cauliflower
1/4 cup fresh onion
1 1/2 cups brown rice
2 tbsps. of low sodium teriyaki sauce ( for a little moister)
8 egg roll wrappers
2 tbsps. olive oil, divided
preheat oven to 370
Chop sausage, mushrooms, onions, broccoli, and cauliflower up real small (so you get lots of good stuff in each bite) and
sauté in a table spoon of olive oil just long enough to brown the mushrooms and onions and warm up the veggies and sausage
cook the rice according to box/bag directions
mix the rice in with the sausage mixture
put mixture in center of egg roll wrapper (I just eye balled how much) and fold it up. Use a little water on the last corner to get it to stick
I didn't have cooking spray so I used a little olive oil on the bottom of the pan and spread it around with a paper towel
lay egg rolls folder side down and brush the top with a little more olive oil
bake for 15 mins and the flip and bake another 10 to 15 mins
I ate 2, my boyfriend ate 3 and my picky 18month old ate 1 bite and spit it out lol even if you eat 3 its still only 495 calories and for a full grown man that is not much.
