High Protein Zero Grain Waffles- 32g protein in a serving

I have been trying for a long time to make a protein waffle that tastes good and doesn't have grain in it. Tonight I had success:

2 eggs
2 scoops Vanilla Whey Protein powder ( I used Pure Protein Natural Whey)
2 TBSP Psyllium Husk ( I used Now Whole Pysllium Husk)
2 TBSP Tapioca flour
about 4-6 oz of yogurt ( I make my own so this was stevia sweetened whole milk vanilla)

Blend it all together and let it sit. Mine sat about 10 minutes or so. I think this was critical to let the psyllium soften and expand.

Makes 2.5 Waffles in a Waring Belgian Waffle maker. 299 calories, 32 grams of protein per serving when half of the above ingredients (assuming you eat 1.25 waffles) are entered separately in MFP. I didn't cook until real brown and these were really tender and got a double compliment from my hubby who has choked down many many waffles :)

    These sound good! I might give them a go....might need to go buy a waffle iron first......

    I read this as "zero gravity waffles." I'm disappointed that they won't float, but that's a good recipe.
