Quick and easy lunches

This week I knew I was going to be super busy with no time to cook. I bought a rotisserie chicken from BJ's for $5 and bought the 2-serving size green giant pre seasoned frozen veggies in several different varieties. Each day for lunch I had 3oz of chicken and an entire package of veggies. Since I used a different veggi everyday and the seasonings were different for each one I felt almost like I was having something different every day....and I spent less then $2 on each meal.

You just can't do much better than that. cheap, very little effort, and moderately healthy and low calories. The only thing taking points off is the sodium.

Damn....I feel like a genius.

    yeah rotisserie chickens are amazing- glad you made it work for you- I can only pick the meat off and I haven't had good luck with the carcass making soup- (because that's a great use also) buuuuut yeah- precooked whole chickens. NOMNOMNOMNOM

    Stick the bones in a crockpot with enough water to cover it. Add whatever veggies are laying around wilting (I personally love celery, carrots, tomatoes, peppers and cilantro). Leave crockpot on low for at least 12 hours, I sometimes do 24.

    Strain everything out of the broth and leave in the fridge until cool, scrape off the fat (or leave it, whatev) and there you go.

    I haven't bought canned/boxed broth in quite some time.
