14 Hour Amtrak trip need ideas on food to pack.

Hi, husband and I will do a 14 hour Amtrak trip leaving at 5 AM and arriving at 7 PM. I understand that Amtrak can serve a microwaved pizza or a cold sandwich. So, we'd like to take some better/healthier foods. There won't be room for big coolers but we can freeze water bottles and take a mylar cooler bag, etc. Thanks for any advice.

Looks like Amtrak's website has the menus and calorie counts - the dining car even has a healthy option on the ones I looked at:

Ideas to pack: protein bars, bags of nuts, fruit, PB&J sandwiches, cheese sticks, yogurt (would need to eat that earlier in the day probably), beef jerky, veggies, hummus0 -
Just a couple of thoughts to add to those great ideas....hard boiled egg, bag of tuna, fruit.0
