Mini Meatloaf

Makes approx. 21 muffins

2 lbs. Lean Ground beef
1 1/2 Cup Italian Bread Crumbs
1 Cup Partly Skimmed Mozzarella
2 egg whites
1 small onion diced
1 clove garlic minced
1/2 cup milk
1 tsp. salt
1 tsp. black pepper
1/2 cup ketchup
2 tsp prepared mustard
1 tblsp. Splenda Brown Sugar Blend

- In a large bowl mix the ground beef, bread crumbs,cheese, egg whites, onion, garlic, milk, salt and pepper until well blended. ( I always use my hands for this)

- Make into slightly larger than golfball size balls and press into a cupcake/muffin tin ( I used 1 sec spray in the tins)

- mix the ketchup, mustard, and splenda brown sugar in a seperate bowl and spoon 1 tsp. mixture on top of mini meatloaves.

Cooks at 350 for approx 45 minutes


Servings: of 1 muffin 1 container (21 muffins ea.)

  • Mmm that one sounds good too.

    lol Im making mine tonight , I have made it forever , the kids love it. But using lean beef as well as partly skimmed cheese and egg whites alone make a HUGE caloric difference
