I would love some recipe ideas that are quick and easy!

Hi my name is April. I am a very picky eater, I don't like onions, peppers or tomatoes... anything I can make for myself for dinner or lunch that has none of those things in it?.... Thanks for your help!!

I keep my meals simple by choice. Salads....right now I prefer spinach with almonds, feta cheese, hard boiled egg white and fat free raspberry vinegrette. Add some chicken breast.
Egg muffins: I eat them all the time, in a muffin tin out in your favorite breakfast meat, cooked veggies and a tiny bit of cheese - fill with egg beaters or eggs and bake. Refrigerate after baking and grab and go the rest of the week
For lunches: hard boiled eggs, string cheese, steamed brocolli, grilled chicken breasts. I make up most of my foods on Sunday and repackage them for the week. Quick and convenient.0 -
I eat a lot of soup. You can go with canned soup, but I like to make my own so I can control the sodium better. One of my favorites is to make beef and barley soup. It is extremely filling and you can add whatever vegetables that you like.0

Do you like fish? Try a broiled fillet with mango salsa. Buy one mango (I buy it alread peeled and cut), one lime, one jalepeno (as little or as much as you like for heat), cilantro and 6 oz fillet with our without skin. Chop the fruit and veggies. Add the juice of half the lemon and finely chopped cilantro. Salt and pepper to taste. Mix and set aside. Place the fillet on an oven safe baking dish - if there is skin, place it skin side down. Squeeze the remaining lime juice over the fish. Season with a little sea salt and cracked pepper. Broil for 6-10 minutes until the fish is flaky. Serve the fish with salsa. Dinner is done. 20 minutes. Plus, you have yummy salsa to have a snack for the next day.
Like beans? There are tons of crock pot bean recipes available on the internet. It takes a bit of time to get it into the crock pot but then you just let it cook all day and eat it when you get home. I have a great crock pot 16 Bean with Ham soup recipe if you're interested.0 -

Sorry, I was on vacation and didn't realize you had posted this! I really like mango - it has the consistency of cantaloupe but has a bit of a citrus tang. My husband is a deep sea lobsterman (yes, he is as Maine as you get complete with the accent) so I buy my fish at the fisherman's coop but you can buy it any grocery store. If you prefer white fish...haddock, halibut and pollock would be my choice in that order. It works great with salmon too.0
