    I made this for me and my SO last night and we both loved it! Super easy and super healthy!

    Mediterranean Kale


    12 cupschopped kale
    2 tablespoonslemon juice
    1 tablespoonolive oil, or as needed
    1 tablespoonminced garlic
    1 teaspoonsoy sauce
    salt to taste
    ground black pepper to taste

    1.Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the kale, recover, and steam until just tender, 7 to 10 minutes depending on thickness.
    2.Whisk together the lemon juice, olive oil, garlic, soy sauce, salt, and black pepper in a large bowl. Toss steamed kale into dressing until well coated.

    I made a half batch.

    I'm throwing a little brown rice and steamed broccoli together with a bit of lower-sodium worcestershire sauce tonight.

    Brussell Sprouts - I buy the Publix frozen Brussell Sprouts - cook in microwave according to package - place in single layer on baking sheet - toss with evoo, garlic salt and pepper. Roast at 425 until your desired crispiness

    I added 2 chopped red peppers to up the vegetable content and browned the nuts under the broiler instead of using the olive oil/pan approach.

    Toss a bag of cauliflower florets with olive oil and s&p. Roast on a baking sheet in a 400 oven for 25-30 minutes until golden brown. Toss with balsamic vinegar. Put in a baking dish. Sprinkle the top with Parmesan cheese. Put back in the oven for about 5 minutes. My whole family (including finicky children) love this dish. There are never any leftovers.

    I made my husband bulgar wheat with dried cranberries for lunch. I found the recipe online. I'm sure if you google it, it will come up. I suggest adding some sage and using chicken broth.

    Asparagus is still in season, so I take advance of that while it lasts!

    Sauté mushrooms with green onion and shredded cabbage. Drizzle with sesame oil and a little soy sauce.

    Veggie tray with dip.

    Sautéed spinach. Try it with buffalo sauce :)

    Grits (my husband likes these with buffalo sauce too).

    Take a sweet potato, stab it with a fork 10 times, cook it in the microwave for 10 minutes. Get it out, get the skin off, mash it with a fork, put some salt and garam masala on it and mash again. 100g - 90 kcal.

    I like to take a bag of fresh green beans and place on a baking sheet drizzled with a little Olive oil. Season with kosher salt, ground black pepper and garlic powder. Bake for 15 minutes and then sprinkle with a little Parmesan cheese. Soooo good!
