Found this recipe from eating clean.. Thought I share, it was pretty yummy! :happy:

Curried Quinoa Salad
4 servings


1 cup dry quinoa
1 tsp curry powder
4 green onions, 1/4" dice
1/4 cup unsweetened dried cranberries
1/4 cup walnuts, chopped
Sea salt and fresh ground black pepper, to taste



INSTRUCTIONS:

Bring 1¾ cup water and quinoa to a boil. Cover and simmer on medium-low for 15 minutes or until all the water is absorbed. Stir in remaining ingredients and serve.
