October 1st Is World Vegetarian Day! I notice a lot of people talking about going vegetarian or vegan, what a great day to start! Even if you love meat and just incorporate "meatless mondays" into your life it will force you to make a veggie-full meal once a week! Or you could try promising yourself to go veggie for a week, two weeks, or a month, and just see how you feel.

We have been vegan since April and my husband and I are ALWAYS saying it's the best we've ever felt and how we wish that we had made this lifestyle change many years ago. It's helped with allergies, weight loss, my Husband's kidney stones, and it's amazing how much energy you get from eliminating the cholesterol from your diet. MFP makes it very easy to make sure you are getting enough protein, iron, and calcium into your diet.

It's not for everyone.. but if you are interested in learning more I'm always willing to share recipes, website, books, etc!

Could you PM me some links for veggies websites? My hubby is getting used to the idea of cutting back on our meat, but I will never be able to convince him to go vegan (I don't think I could either!). We do "meatless" day once a week, but it usually includes eggs so its not as healthy as it could be.

    Thanks a ton!
