Cheesey, Broccoli, Chicken, Quinoa Casserole- ohhh yeah!

2 cups diced or shredded Chicken Breast (cooked)
1 can cream of broccoli soup
1/4-1/2 cup 2 % milk
1/4 cup olive oil mayonaise
1-1 1/2 cup chopped broccoli (can use the stems too!)
1 cup cheese of choice (I used sharp cheddar)
2 cups cooked quinoa
1/2 cup shredded parmesan
Mix the soup, milk, may, broccoli, cheese(not the parm), quinoa, and chicken in a bowl, dump contents into a casserole dish, top with parm cheese and bake at 425 for about 20-25 min, or until bubbly and looking gooey and delicious!
This is some serious yum, especially on one of those days you really want some comfort food! Obviously there are other ways you can reduce cals, etc. in this dish as well- you could reduce the amount of cheese used, or use reduced fat cheese...you could probably omit the mayo, use reduced fat cream of broccoli soup. This recipe makes about 8 servings that are about 1 cup I would say...made my way 1 serving is about 298 cals according to MFP, but like I said, I think there is even more you could do to reduce the cals. & fat if you wanted to!
