Cholesterol high

I just got my blood work done, and my cholesterol is high. I know I need to cut back to leaner proteins. I'm looking for some suggestions for proteins on non meat based foods. My meal plan is Carbs 40%, Fat 30%, and Protein 30%. I'm flextarian, and I have no plan on a vegan based diet. I tried it that route, but didn't like it at all.

Vital wheat gluten. Essentially you make a dense dough with wheat flour and water and then rinse the s*** out of it and then cook it. A much quicker way is to buy vital wheat gluten and mix it with liquids and seasonings of choice and cook it. I love it, it has a chewy "meaty"/bready texture and is very versatile. High in protein.0

Fish high in omega-3 fats should help you lower your LDL and raise HDL.
