my fav salad
green mix (spring mix, whatever you prefer)
avocado
1/8 cup crasins
grated carrot (optional..i don't use this)
1/8 cup nuts of choice (i use pecans)
red pepper cut very fine
chopped green onion tops
1 serving peppered goats milk cheese (sometimes i substitute for feta)
dressing
maple syrup light (about 1 tsp, your preference)
olive oil
balsamic vinigar
mix first 8 ingredients, let sit to room temperature to soften cheese, mix in maple syrup and olive oil, then balsamic to taste. i don't measure anything here but the nuts, crasins and cheese. enjoy!
this is my fav! not sure of nutritional value though, i log it all seperately.

Dumb question~ Can you get goats milk cheese in the grocery store?? I've never heard of it. :ohwell:0 -
yes, usually at the deli or with the specialty cheeses, near the feta. the stuff I buy comes in sort of a tube.0

Ok...I'll add one. This isn't actually the best in the sense of low calorie but it's not horrible!
Tomato Caper Salad with Buffalo Mozzarella Chunks
4 C. 1/2 inch cubed Italian Bread
1 1/2 pounds Roma Tomatoes cut into chunks
3 medium garlic cloves, minced
1 medium red onion, chopped
1/2 C. torn fresh basil leaves
1/4 C. drained capers
2 1/2 T. red wine vinegar
1/4 C. olive oil
1/2 pound Buffalo mozzarella cut into cubes
Directions:
Preheat oven to 350.
Place bread cubes on a cookie sheet and bake for about 15-20 minutes; until bread is crispy.
Place all remaining ingredients in a bowl and let sit for 15 minutes.
When bread crumbs are done toss into bowl and stir. Let stand 10 minutes before serving and stir often so that bread soaks up the dressing.
