Hi, does anyone know how to set your workout goals in your diary? I have the calorie part down, but I want to set goals for how many set/reps/minutes I do each morning.

all you can do is set goals for how many minutes per day/week you intend to workout. If you want to go into detail you need to start a fitness diary...I use old fashioned pen and paper.0

Okay! how can I do that? I have played with my settings, but I must be missing something.0

It really doesn't mean anything for MFP's calculations. I wouldn't worry about it.
That said, Home>Goals>Change Goals>Continue (pick guided, or custom - it doesn't matter)>then input the info into the available blanks.0 -
My Home>Goals>Change Goals. Fitness Goals0

I also like to keep track of my exercise goals in the calendar on my phone, just so I know about reps and weights I'm using!0
