Rest Days and Energy Levels

I'm trying to find the right balance of enough exercise and having enough energy. My weightloss is very much dictated by how active I am, diet (while important in general) has a relatively low effect on my weight. When I started out, I was working out every week day and then resting on the weekends. I would go Zumba (60 min) on Monday and Friday and Tae Bo (20 min) on Tuesday-Thursday. The problem I started running into was that I would have less and less energy as the week went, I just wasn't getting it back after sleeping a solid 7-9 hrs of sleep. This was especially problematic on Tuesday since I would do Zumba Monday night and Tae Bo Tuesday morning, I would pretty much need to double my coffee consumption to keep going through the day. In light of that I got rid of my Tuesday workout to give myself a mid-week rest day after one of my more major workouts. It definitely helped with energy levels, but I stopped losing after getting rid of the workout day. I want to add it back, but I need way to help boost my energy through out the week. Any body run into similar issues?

what are your daily calories set at????

I find if I don't eat the right amount of food my workouts are not fueled.

    I do HIIT 2x a week (Tue/Thur) and Lift 3x a week M/W/F

And if I don't eat at least 1600 calories a day I just don't feel right the next day.

My goal is to lose 1 lb a week, I've got a moderate activity level, calorie goal is 1460. I usually eat back most of my calories. If anything I might just be about 200 calories below my limit on my big burn days.
