Need help figuring out what I should be eating/burning

So MFP sets me at 1360 to eat daily and burn 2600 for the week. I usually burn between 500-900 daily. However, I don't want to eat back my workouts. How do you deal with the net calories, if you are under 1200 do you eat till you get back up? Thanks I hate this is sooooo confusing!
