Turkey Stroganoff
This was a staple growing up. I never realized how healthy my mom cooked until I was older. She always swapped out ground turkey for beef and hid veggies in everything known to man! We always had whole wheat bread and never soda...I definitely didn't feel deprived! She's an amazing cook and I've been blessed with the 'cooking bug' as well. So, here's my moms take on stroganoff...let me know what you think!

serves 6

1 tsp. olive or canola oil

1 pkg. 99% fat free ground turkey

1 onion finely chopped

1 zucchini or your favorite summer squash finely chopped

1 8 oz. pkg sliced baby bella mushrooms

1 can cream of mushroom soup (healthy select)

1/2 cup fat free plain yogurt

1 tsp. garlic salt

1 tsp. pepper

3 cups cooked brown rice or whole wheat pasta



Heat oil in large non stick skillet on medium-high heat. Add turkey and cook til almost brown, add onion, zucchini, mushrooms and garlic salt. Cook, stirring occasionally, until onion is translucent and mushrooms and squash are tender. Add soup, yogurt and pepper and simmer for 5 min. Check seasonings. Serve over pasta or rice! Enjoy!
